Tapi kalau nk cari mana kampung Malau ni, hangpa search la Sedim Tree Top Walk, yang mempunyai jambatan gantung tertinggi di dunia. Garam sebenarnya untuk ketahanan pes itu dari rosak sama seperti air asam jawa. Pes atas boleh digunakan untuk 1 kg mee kuning. Pes ini perlu testing untuk sepingan mee untuk dapatkan nisbah yg tepat. Mee goreng mamak ini tak jadi sekiranya tidak gunakan sekali dgn PES MANIS SEPERTI KUAH PASSEMBOR atau Kuah rojak mamak. Ubi masih dalam panas-panas lenyek. Air rebusan ubi boleh digunakan untuk kisar ubi. BAHAN UNTUK PENYEDIAAN PES: 3 ulas bawang putih , 5 biji bawang merah (kecil). Goreng bawang putih dan bawang hingga layu. Kisar bawang putih dan bawang bersama dengan dengan ubi tadi. masukan semua bahan tadi telah dikisar, masukkan dalam periok dan masukkan 4 cawan air dan masak hingga mendidih, bila sudah mendidih kecilkan api, ambil lebih kurang 2 sudu besar (tbsp) asam jawa dan perahkan dengan 1/2 cawan air, tapis dan masukkan dalam kuah yang sedang masak. Masukkan gula sebanyak 5 sudu besar (peh!.). Kuah ini memang manis sedikit dari kuah yang lain. Goncang kuali dengan api sedikit keras. Kalau anda mahu basah tambahkan sedikit air atau pes/perencah. Kalau kering biarkan dia. Pada masa ini anda perlu tentukan api dapur jika basah kurangkan api kalu kering keraskan api dapur. Bila mee sudah mulai masak. Kecilkan api dan tepikan mee anda dan kosong ruang tengah kuali. Titiskan sedikit minyak dan pecah masukkan sebiji telur. Tutup telur anda dengan mee dan membiarkan dalam 30 saat. Keraskan kembali api dapur dan kacau serata mee dengan telur dengan cepat. Gorengan cuma 30 saat saja. hijau yang dipotong2. Biar sekejap dan masukkan sayur bayam. Biar sampai
bayam layu dan bolehlah dimasukkan telur. Pecah2 telur agar sekata
dengan kuah. Kalau nk sebijik-sebijik pun bleh.</div>
